每年冬至来的时候,家家都会腌制一些鱼肉,以备过节食用。在武汉,一位做家的媳妇如果腌制不出好的鱼肉,会是一件丢脸的事情。季顺每年过冬的时候,都会跟着母亲一起做腌肉;不过往年的鱼肉腌制的都不太成功,反倒是到了上海做成功了。 季顺根据韩国泡菜的腌法,调整了腌肉的方法,就是带着手套做活;不让鱼肉沾染上手心来的汗水,调味料要抹在肉纹里。通常我们会将调配好的鱼肉挂在阳台上风干,不过这一次我特别将肉泡在水中足足七天,让肉完全吸收后,再凉干之后,上锅蒸!
